JAM Infused Cookie Bars

This infused recipe for cookie bars is, well, our JAM. Made easily with your favorite preserves, this cookie bar recipe may become your new favorite dessert, infused or not! (We vote infused though, obviously.)

- ¾ cup salted butter cut into pieces, plus 1-2 tablespoons for greasing pan (1 ½ sticks)
- 2 tablespoons THC-infused Canna Butter get the Canna Butter recipe here
- 1 ½ cups all-purpose flour use gluten-free if you're into that kinda thing
- 1 ½ cup rolled oats if you're going gluten-free, use GF oats too
- 1 cup brown sugar packed
- 1 teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 10 ounces jam or preserves we love apricot!
Preheat the oven to 350°F and liberally grease butter a 9 x 13 pan
Mix together the butter, flour, oats, brown sugar, baking powder and salt.
Press half the oat mixture into the pan, using a little bit of force (c’mon –
make those yoga classes pay off). This is going to be the base of your cookie bars, so pack it in!
Spoon the preserves over the cookie base and spread evenly.
Sprinkle the other half of the oat mixture over the top.
Bake for about 35 minutes, or until lightly browned.
Let cool completely (this is seriously the hardest part of the recipe… you have no idea how many times we’ve eaten hot, gooey, messy JAM bars straight out of the pan with terrible consequences).
Cut into 18 cookies and serve.
Store in a sealed (and labeled!) container at room temperature for up to 3 days.
This recipe yields 18 bars, which are about 20mg each.
