Vegan Infused Pot Brownies

When you think of pot brownies, prunes may not immediately come to mind, but when pureed they can be substituted for eggs in many baked goods, and they offer an added sweetness to this insatiable treat. Seriously–you won’t be able to put these down!

- 6 ounces unsweetened chocolate
- ½ cup California extra virgin olive oil

- 2 cups light brown sugar
- 10 ounces California prune purée (that's just under 1 ¼ cups)
- 1 ½ cups all-purpose flour
- 1 tablespoon baking powder
- ¼ cup cocoa powder
- 2 teaspoons vanilla extract
- Flaky sea salt for garnish
- ½ cup chopped nuts OPTIONAL
Preheat your oven to 350°F. Line a 9×9-inch baking pan with parchment paper, then lightly grease with cooking spray or with a wipe of olive oil.
Using a double boiler, melt the chocolate with the olive oil and infused oil. Whisk in the sugar and prune purée and mix until dissolved. Sift the flour, baking powder, and cocoa powder into a large bowl. Gently fold in the chocolate and prune mixture, then stir in the vanilla. Fold in nuts, if using.
Spread the batter in your prepared pan and bake 20-25 minutes, or until the top starts dry our and the brownies are just beginning to pull away from the sides of the pan. Remove from the oven, sprinkle with flaky salt, then let cool in the pan.
Remove from the pan using the parchment paper, then cut the brownies into 3-inch squares and serve!
